Oh hi, Prosecco has a special place in any “dignified persons” drink arsenal, why? It is one of those socially acceptable drinks to have at almost any hour of the day. People might judge you if you down a vodka soda at lunch, or while getting your hair done, or while making breakfast. Prosecco, not so much, you can basically always drink Prosecco without judgement, at least that’s my theory.
The Rossellini came out on my drink menu last summer and it’s a crowd favorite with the girls. Making your own fancy ice cubes is always fun, but when they’re boozy it’s even more fun.
You can make this drink two ways- with just the Campari ice cubes and Prosecco- keeping it 100% Italian and socially acceptable at 10am or you can add some Kettle One Botanical Grapefruit & Rosé Vodka to it for more of a pre-dinner cocktail.
The only tricky part about this cocktail is the ice cubes. You need 1/4 Campari to 3/4 water otherwise they won’t freeze and they’ll come out slushy.

Rosellini Recipe
Lamarca Prosecco, campari ice cubes, Kettle One Botanical Grapefruit & Rosé, lemon
2 Campari Ice Cubes
1 oz Kettle One Botanical Grapefruit & Rosé Vodka
1 Lemon Twist
6oz Prosecco
Add the vodka (optional) first, two ice cubes, fill remaining champagne glass with prosecco, finish with a twist of lemon.
For Ice Cubes:
Get your favorite ice tray. Fill the tray with 1/4 Campari to 3/4 water. Freeze overnight.
