Pink Girl Punch

Summer time is all about rosé - sparkling, still, semi sparkling. I mean, I’ll basically drink anything that’s pink but especially when you’re sitting outside with the smell of honeysuckle in the garden and freshly watered grass. This is a take on a sangria but with rosé and prosecco.
I am such a sucker for a fantastic label. There are some great rosé’s out right now, with some great labels. Just walk through the rosé section at Whole Foods. I picked a simple one for this cocktail, Pool Boy, and it comes in a plastic bottle, which is perfect for pool parties. You’re adding so many other ingredients to this cocktail that you’re just looking for an easy base- in other words, don’t splurge on the rosé for this recipe. Rosé in a plastic bottle is fine!- something I never thought I would say.
You can either make these as individual servings or you can make it in a big pitcher and top each glass with prosecco. It’s up to you. Enjoy and don’t forget to tag me in your photos of your “Pink Girl Punch.”
Pink Girl Punch Recipe:
Frozen blackberries, frozen strawberries, thyme, 1 orange, sugar water, 1 bottle rose, 1 bottle prosecco, pomegranate ice cube, fresh fruit for garnish.
For the syrup:
Combine in a small pot over medium heat- 1 cup strawberries, 1 cup blackberries, 5 sprigs of thyme, 1 cut up orange, 1 cup sugar, 1.5 cup water in a small pot. Bring to boil, remove from heat and let stand for up to an hour. Strain out ingredients and refrigerate. This syrup will last for up to two weeks in the refrigerator.
Single Cocktail:
In a wine glass
1.5 syrup
6oz rosé
2 slices fresh orange, 2 sliced strawberries, pomegranate ice cube
top with prosecco
Pitcher Style:
Combine all your syrup with an entire bottle of rosé. Add in 2-3 cut up oranges, 10 strawberries, refrigerate for at least one hour. Serve over ice and top with prosecco when serving.
*note- for my ice cubes I used no sugar added pomegranate juice and water. You can use another juice such as orange or just use regular ice cubes.
